SAN FRANCISCO — The Every Co., which creates egg proteins using precision fermentation, has been granted a United States patent titled US 12/096,784. The company said the patent generally covers any ingredient composition for food products that incorporates recombinant ovalbumin combined with at least one additional consumable ingredient.
The patent includes such innovations as: wild-type ovalbumin variant with enhanced performance through various modifications; and ovalbumin sourced from multiple avian species and production methods utilizing a range of yeast and such fungal systems as Pichia, Trichoderma, Saccharomyces, and aspergillus, according to the company.
The patent also includes such applications as baked foods, binding for meat and meat analogues, ready-to-eat egg, whipped cream, ice cream, meringues among others.
“Ovalbumin is the protein behind Every’s egg white replacement as a B2B ingredient in dozens of the toughest applications,” said Arturo Elizondo, co-founder and chief executive officer of The Every Co. “And is also the sole protein powering the Every Egg, which debuted at 3-Michelin star restaurant Eleven Madison Park last year in applications ranging from pisco sours to coddled egg vinaigrettes to chawanmushi and the iconic omelet.”
In January, the company revealed plans to introduce Every Egg, a liquid egg product developed using precision fermentation to transform yeast into egg proteins, to the foodservice category in 2024.
The company’s Every EggWhite, an animal-free egg white protein product, already has been commercially available for food manufacturers to use as functional ingredients in their branded products, Elizondo said.
Every ClearEgg debuted in October 2021 following the launch of animal-free pepsin, a porcine pepsin replacement, earlier in 2021. Other The Every Co. products include Every Protein, an animal-free soluble egg white protein.
The Every Co. also has established partnerships with Alpha Foods, Glendale, Calif., a manufacturer of plant-based meat alternatives, to incorporate Every EggWhite into some products and recently The Vegetarian Butcher in June. That partnership was created to replace eggs in The Vegetarian Butcher’s plant-based meat products.
