KANSAS CITY — The pasta category continues to see a variety of innovative introductions across the retail and foodservice sectors.

Equii, a manufacturer of grain-based products using plant-based proteins, made its debut in the pasta category earlier this year. Joining the company’s existing line of bread products, Equii’s pastas are derived from the brand’s complete protein flour formulated through fermentation. Products in the pasta line include macaroni and cheese, with 19 grams of protein and 6 grams of fiber per 3.5-oz serving, and rigatoni noodles, with 28 grams of protein and 10 grams of fiber per serving.

“The introduction of Equii rigatoni and mac and cheese to the pasta category allows us to stand out amongst competitors and empower consumers to eat without compromising on foods they love,” said Monica Bhatia, co-founder and co-chief executive officer of Equii. “And with the added benefit of complete protein, these new pastas offer balanced nutrition for all ages and dietary needs.”

Plant-based pasta maker ZENB introduced a line of ramen. The non-fried noodles are derived from the same 100% whole yellow pea base used across the gluten-free ZENB pasta portfolio and come with a savory soup broth. The product contains 18 grams of protein and 11 grams of fiber per serving. ZENB’s ramen launched in three flavors: spicy miso, a heat-filled mix of chilis and savory miso flavor notes; shoyu, a tamari soy sauce made with ginger and white pepper; and vegan tonkotsu, which features flavors from toasted sesame and roasted garlic.

“With a growing interest in Asian cuisine and as consumers continue to seek simplicity and convenience from their foods, we tapped our deep understanding of flavor and food ingredients to fashion a refined ramen that embodies the cultural influence of Japan with the added nutritional benefits ZENB is known for,” said Hugo Pérez, chief storyteller at ZENB.

Domino's Pizza launched two macaroni and cheese varieties in its US stores. The oven-baked 5-Cheese Mac & Cheese features penne pasta, a blend of cheddar, American, Parmesan-Asiago and mozzarella cheeses, and Alfredo sauce. The Spicy Buffalo 5-Cheese Mac & Cheese includes the same ingredients along with a topping drizzle of Buffalo sauce.
